Jonnie and Thérèse Boer

Jonnie Boer became head chef at Restaurant De Librije at the age of twenty-four and a few years later he bought the restaurant together with his wife Thérèse, a respected wineologist and hostess, after which the first Michelin star followed shortly after the takeover of the restaurant in 1993. In 1999 followed the second star and he is the youngest two-star chef in the Netherlands. In 2004 De Librije is the second restaurant in the Netherlands that receives a third star. De Librije has three *** stars since then and is at the top of the Netherlands. Since the end of 2017 Brass Boer has opened in Bonaire. Since the beginning of 2019, a second branch has opened in Zwolle. Brass Boer Home.

Vacancies Independent Working Chef

As an independent working chef you have a passion for cooking and a high degree of independence. You will pay attention to the quality and freshness of the products used and it is important that the final product has an optimal taste and presentation. Furthermore you have a service minded attitude. 


Activities

A couple of activities within the function given:

• Preparing dishes and dish parts according to recipe and planning
• Supervising the quality of the work of possible students and the observance of the hygiene regulations  
• Cleaning the work environment, kitchen equipment and machines.  
• Assisting in receiving and storing delivered items  

 

Profile

For this profile you need the following abilities:

MBO level 3-4 work and intellectual ability  
• Knowledge of HACCP  
• Knowledge of different cooking styles, dishes and preparation methods  
• Product knowledge  
• Independent  
• Good communication skills  
• Stress resistant  
• Good command of the Dutch and English language (oral and written)
